maple corn bread with bacon and scallions

Looking for holiday recipes? I made this last night and it was so yummy! I got the recipe from the latest edition of my domino magazine.

maple corn bread with bacon and scallions
Serves 8 to 10
2 T butter, plus 4 T melted
8 slices bacon, cut into 1/4" pieces
2 scallions, thinly sliced
1 1/2 c whole milk
1 egg, lightly beaten
1/2 cup maple syrup
1 1/2 c stone-ground yellow cornmeal
1/2 c all-purpose flour
1 1/2 tsp double-acting baking powder
1/2 tsp baking soda
1/2 tsp salt
Preheat over to 425. Grease a 10" cast-iron skillet with 2 T butter. Over med heat fry bacon till crispy, about 6 min. Add scallions and continue to cook, stirring oftern for 2 more min. Remove from heat and let cool. In a large bowl, combine the milk, egg, maple syrup and 4 T melted butter. In a separate bowl, conbine the cornmeal, flour, baking powder, baking soda and salt; stir with a fork. Pour dry ingredients itno the wet, and stir gently to conbine. It's okay if some lups remain- do not overmix. Pour the batter into the buttered skillet, sprinkle the cooked bacon and scallions on top, and bake until set in the middle, about 25 minutes.
